Grapefruit Mojito

The first Mojito I tried was at a little Cuban cafe in the Ravenswood neighborhood of Chicago.  My husband and I sat at the cozy bar in front of the restaurant where, right before our eyes, the bartender muddled an unforgettable creation.  ¡Delicioso!  I was hooked!  We couldn’t stop at just one drink we had to have another.  This recipe is based on that experience, using brown sugar and the addition of fresh squeezed grapefruit juice.  I dare you to stop after one!!!

Ingredients:

1/2 oz fresh lime juice + wedge of lime

1 Tbsp + 1 tsp brown sugar

4 fresh mint leaves

2 oz fresh grapefruit juice + zest

2 oz white rum

Grapefruit sparkling water

Directions:

  1.  Combine grapefruit juice, zest (about 1/8 tsp) and rum in cocktail shaker.  Add ice and shake.
  2.  Directly in serving glass, muddle lime juice along with a quarter wedge of lime, mint, and brown sugar until sugar starts to melt.
  3. Fill glass with desired amount of ice.
  4. Pour mixture from shaker into the glass with muddled ingredients and ice.  Stir.
  5. Top with sparkling water.
  6. Garnish with mint leaf and grapefruit slice.

Yield: 1 serving

Tip:

If preparing this recipe for a party, quadruple all ingredients. Start by muddling the lime juice, lime, brown sugar, mint leaves in a pitcher.  Stir in grapefruit juice, zest and rum.  When ready to serve pour over ice in individual glasses and top off with sparkling water.  Garnish with mint leaf and grapefruit slice. Approx. 4-6 glasses
